Wanna know another secret? I stole this recipe from my mother-in-law. Yep, I did. Not my finest hour. Please know my mother-in-law is the sweetest at sharing recipes. But one day, about two decades ago, she wasn’t home and this recipe was sitting on the table. It was begging to be copied. (Yes, I did ask my husband if he thought it would be OK… He doesn’t deny me much!) So, I wrote it down. Please don’t judge me too harshly….it’s one of my favorites and I just couldn’t help myself!
Over the years, this has become my go-to gift for teachers, principals, secretaries, the mail lady…you get the idea! But I never really bake any for us. Truly, it’s a shame because having poppy seed bread baking in the oven is a scent Scentsy needs to capture! Yummmmmm!
So after my success in turning my favorite apple bread into Dutch Apple Skillet Bread, I knew I had to try it with poppy seed bread. Oh. My. Goodness. This might not have been a good thing. Now, I’m really going to be whipping this up more often! The cast iron skillet added nice color and flavor (thank you Maillard reaction!), and the larger surface area on top equals more tasty topping per piece. Plus, it was ready in 25% less time than the traditional recipe.
I’m still going to make batches of my traditional poppy seed bread to give as gifts at Christmas, but Skillet Poppy Seed Bread is going to be a weekend treat for my family much more often! Thanks, Pat! Without you, I wouldn’t have this stellar recipe!

Skillet Poppy Seed Bread

This recipe can also be baked in muffin cups and loaf pans. Simply adjust the baking time.
Ingredients
For Bread
- 1 Tablespoon butter, for greasing cast iron skillet
- 1 1/2 c. all purpose flour
- 1 1/4 c. granulated sugar
- 3/4 c. milk
- 1/2 c. oil
- 2 eggs
- 2 teaspoons poppy seeds
- 3/4 teaspoon salt
- 3/4 teaspoon vanilla extract
- 3/4 teaspoon almond extract
- 3/4 teaspoon butter flavoring
For Glaze
- 3 Tablespoons granulated sugar
- 2 Tablesoons orange juice
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/4 teaspoon butter flavoring
Instructions
- Preheat oven to 350° F. Using 1 Tablespoon of butter, grease 9-inch cast iron skillet well. Set aside.
- In a large mixing bowl, combine all bread ingredients. Using a handmixer, beat well for 1-2 minutes until no lumps remain.
- Pour into greased skillet and bake for 30-35 minutes or until center tests done with a toothpick.
- Mix together glaze ingredients and brush over top. Allow to cook at least ten minutes prior to slicing.
- Store in a tightly covered container for 5-7 days in a cool environment.
