This recipe is from my great grandma. I only knew her for the first ten years of my life, but she was a wonderful lady! Every week growing up, my mom would take us, my grandma, and my great grandma to the grocery store. Great Grandma never had a driver’s license. That always seemed strange to me, growing up in an era when everyone drove! Great Grandma raised a family through the Great Depression, and she knew how to make the most of the simple ingredients she’d been given. Of all her recipes, Old Fashioned Red Raspberry Shortcake with Vanilla Sauce is my absolute favorite. I know that if you try it, it will quickly become very special to your family, too!
Old Fashioned Red Raspberry Shortcake Recipe…
For me, it isn’t summer if I don’t have Old Fashioned Red Raspberry Shortcake at least once. The vanilla sauce alone is beyond amazing! Growing up, red raspberries were pretty rare where we lived, and buying them was out of the question because they were so crazy expensive. My parents now grow red raspberries and share them with us. So, we are able to enjoy Red Raspberry Shortcake with Vanilla Sauce much more often!
The recipe begins with my favorite biscuits. For the recipe, please use my breakfast biscuits recipe. These homemade buttermilkĀ biscuits are great for breakfast, but they provide the perfect not-too-sweet base for Red Raspberry Shortcake, too. Truly, these are the best homemade biscuits I’ve every tried!!!
The Vanilla Sauce comes together very quickly and is silky smooth. It is the perfect topping for Old Fashioned Red Raspberry Shortcake. You’ll know it’s thick enough when you can run a finger down a spoon and the sauce leaves a line, like the picture below.
I suggest adding red raspberries in two layers, topping with the vanilla sauce, and then adding a large dollop of homemade whipped cream. Old Fashioned Red Raspberry Shortcake always makes me think of my great grandma and the amazing changes she got to experience in her 90 years of life. Old Fashioned Red Raspberry Shortcake with Vanilla Sauce
Notes
Be sure to wash and pick through rasberries to check for leaves prior to adding the sugar. Berries should be firm, not bruised. Extra vanilla sauce can be covered and refrigerated to be reheated at a later date.
Ingredients
- One recipe homemade biscuits
- 5-6 cups fresh red raspberries combined with 1/4 to 1/2 c. sugar
- Whipped cream
Vanilla Sauce
- 3 T. unsalted butter
- 1/3 c. sugar
- 1/4 c. all purpose flour
- 1 1/2 c. water
- 1 t. vanilla extract
Instructions
Vanilla Sauce
- In a medium saucepan, melt butter over medium low heat.
- Whisk in flour and sugar.
- Gradually whisk in water, Once completely incorporated and there are no lumps, increase heat to medium high and cook for 5-8 minutes, or until thickened.
- Remove from heat and stir in vanilla.
To assemble shortcakes:
- Split biscuits in half, placing bottom half in serving bowl.
- Top biscuit with a small amount of red raspberry mixture.
- Add biscuit top and add more raspberries.
- Drizzle with vanilla sauce and add whipped cream, if desired.
