Who doesn’t like a creamy ranch dip for their veggies? I would bet there are few people, unless they are on a diet, willing to forgo this tasty condiment. At our house, I should buy stock in the Hidden Valley Ranch company. 🙂 I figure if a little ranch helps the vegetables go down, it’s just fine. Kickin’ Ranch Veggie Dip not only helps when eating vegetables, but it also wonderful on chips of all types. It’s the cool taste of ranch with a hint of sass.
My brother introduced me to this dip a couple of years ago, and between the two of us, we made a few changes for our tastes. The biggest difference is that we leave out the cottage cheese. I love cottage cheese, but the texture in a dip is a little too chunky for carrot sticks or celery. I also tried to cut back on the amount of salt. As Americans, we really consume too much of that stuff!
As a result, Kickin’ Ranch Veggie Dip was born. This is the requested recipe at Christmas, New Years, and pretty much any time we have vegetable trays or potato chips. (Think pretty much every family gathering!)
See those colorful bits in the dip?! That’s the flavor! And it is sooooooo good! How about from another angle? 🙂
