If you are looking for an easy and useful way to use up leftover turkey, this Instant Pot Small Batch Turkey Stock is for you. I would recommend using at least a 6 quart Instant Pot for this recipe. If I’d been able to, I would have thrown the entire carcass into the pot. However, I had a 16-pound bird. I was only able to use its wings, legs, and thighs for the stock. So, I bagged and froze the rest of the bird for a stove-top stock on a day when I have more time.
As a working mom, I know about being pressed for time. Yet it is EXTREMELY important to me to provide healthy food for my family. Every. Single. Day. I will sacrifice other aspects of my life in order to do this. However, Instant Pot Small Batch Turkey Stock doesn’t require any sacrifices. 🙂 It goes together in minutes, cooks on its own, and requires very little in the way of prep prior to use in recipes.
One of the greatest things about using the Instant Pot is that, unlike stovetop methods, this stock doesn’t require any babysitting. I can go about my life, and when the stock is done cooking, the Instant pot automatically switches to a warming mode. Yay! It can hang out in the pot until I’m ready for it!
If there is enough meat left on the bones, you may wish to use it, too! I like to make homemade turkey and noodles if I have enough meat. Otherwise, I use the stock to make a hearty vegetable soup with small pieces of turkey throughout. You can use this stock in many different ways! You might enjoy using it in my Chicken and Quinoa Soup (use all stock instead of broth and water and turkey instead of chicken). Or my Chicken Zoodle Soup (again, stock instead of broth and turkey instead of chicken), or even my Chicken and Dressing Soup (use in place of the 2 quarts of water).
Instant Pot Small Batch Turkey Stock
Notes
This recipe was make in the 6 quart 10-in-One Instant Pot. I like to refrigerate the stock to remove as much fat as possible. I then use as a base for various soups.
Ingredients
- Thighs, legs, and wings from turkey, most of meat removed (you'll have already had your Thanksgiving dinner)
- 1 onion, peeled and quartered
- 3 stalks of celery, washed and chopped into thirds
- 2 teaspoons Kosher salt
- 1 Tablespoon black peppercorns
- 2 Bay leaves
- Cool water to fill to 2/3 or maximum fill line
Instructions
- Place turkey pieces in bottom of Instant Pot metal insert.
- Add onion quarters, celery pieces, salt, peppercorns, and bay leaves.
- Pour water over mixture.
- Place in Instant Pot and set to Pressure Cook on high for 35 minutes. Allow to come down to pressure normally.
- Strain stock through a strainer to remove bones, vegetables, and spices and use as desired. Stock may be refrigerated and then the fat skimmed from the top, it may be frozen for a later use, or use right away in soups, noodle dishes, etc.
