Heath Brownie Bar Sundae Recipe…
If you’ve ever had the Skillet Toffee Fudge Brownie from Chili’s, then you know what heaven tastes like. This is my recreation of this much-loved dessert.
After preheating the oven to 350 degrees, we’ll start with the brownies. This is a recipe I received from my Foods III/IV teacher, and they’re the best brownies out there. Start by melting 1 cup of butter in a large saucepan. Remove this from heat and stir in the sugar, eggs, and vanilla (creating a kind of goopy mixture).
After this is combined, use a whisk to mix in cocoa powder, flour, salt, and baking powder. Spread this into a greased 9×13 pan and bake for 25-30 minutes.
While this is baking we’re going to make that caramel sauce. Combine brown sugar and cornstarch in a saucepan. Stir in water. Then stir in half-and-half and corn syrup. Cook this until it becomes bubbly (may look curdled).
After it begins to appear curdled, cook for an extra two minutes. Remove from heat, stir in butter and vanilla. Once the brownies are cooked you can take them out and pour the caramel sauce on top. Then add the desired amount of Heath pieces (about two bars). This is best served with a big scoop of vanilla ice cream!

- 1 cup butter

- 4 eggs
- 2 tsp vanilla extract
- ⅔ cup unsweetened cocoa powder
- 1 cup all-purpose flour
- ½ tsp salt
- ½ tsp baking powder
- Heath pieces
Homemade Caramel Sauce
- ½ cup packed brown sugar
- 1 Tbs cornstarch
- ¼ cup water
- ⅓ cup half-and-half
- 2 Tbs light corn syrup
- 1 Tbs butter
- ½ tsp vanilla

- Begin by preheating the oven to 350 degrees and grease a 9x13 pan.
- Then, melt the butter in a large saucepan. Remove this from heat and stir in the sugar, eggs, and vanilla.
- Beat in the unsweetened cocoa powder, flour, salt, and baking powder.
- Spread into your greased pan and bake for 25-30 minutes.
Caramel Sauce
- Combine brown sugar and cornstarch in a saucepan.
- Stir is water. Stir in half-and-half and corn syrup. Cook and stir until the mixture becomes bubbly (begins to look curdled). Cook and stir for an extra two minutes.
- Remove saucepan from heat.
- Once the brownies are cooked, pour caramel on top and spread evenly. Then sprinkle desired amount of heath pieces (I chopped up about two bars).
- Serve with vanilla ice cream.
