Hasty Bread Pudding–Ready in 30 minutes!

Sometimes, all I want is comfort food. You know the kind… the warm, gooey, basic recipes that make you think about simpler times spent in mom’s or grandma’s kitchens. Hasty Bread Pudding is that kind of recipe! Its soft bread filling, wrapped in cinnamon, and covered with a buttery sauce is the kind of homemade goodness that usually takes time to prepare. Hasty bread pudding is (almost) instant gratification that you can be enjoying with your family in 30 minutes or less!

I looked for years for a favorite bread pudding recipe, and I found one about six years ago that I adore. Unfortunately, it takes at least three hours to make! It is a traditional NOLA recipe, and those of you who have read my beignet post know how much I LOVE New Orleans! I modified the original recipe to bake in the microwave and cut it down from a 9×13 recipe to a loaf pan. I have tried to find the link to the original recipe online, but so far I’ve failed. When I find it, I’ll add it to the post.

Hasty Bread Pudding

Two mixing bowls and a glass loaf pan are all you need for this recipe. While I’m taking care of softening the bread with the milk, I mix together the custard ingredients.

Both mixing bowls are then combined, scraped in a greased 8×5 loaf pan, and baked in the microwave on high for 12-14 minutes. If you are using a microwave less than 1200 watts, you will probably have to add more time.

Unlike traditional bread pudding recipes, Hasty Bread Pudding will not be browned due to the microwave cooking. Not to fear…flavor is not compromised! A tasty, velvety, buttery sauce will cover the pudding and add wonderful flavor. (If you want to add a little rum or bourbon to the sauce, feel free! I prefer simple vanilla extract.) 🙂

Hasty Bread Pudding ranks high on my list of comfort foods! Not only is it an extremely simple recipe, but it can be baking while everyone is eating dinner and served wonderfully warm for dessert. This is not Yankee Doodle’s hasty pudding…it is better!
