English Toffee Cappuccino Mix Recipe…
I couldn’t remember how long I’ve been making this recipe until I looked at the date at the bottom of my print-out…almost ten years! Crazy! I remember when my youngest was almost two he reached up on the counter and dumped out a batch that I’d just made all over my clean kitchen floor…he is going to be 12 this year! Hard to believe I’ve been making this mix for that long! If you are curious about the original recipe, I tracked it down and you can find it here.
Over the years, I’ve modified the recipe not only to meet my tastes but also to cut down on some of the processed products and on the amount of sugar in the mix. I LOVE coffee and I really wanted to taste that in this mix…not all the sugar!
There are many school days where a hot mug of this gets me through the afternoon. It contains less sugar than a lot of other things I could eat and
English Toffee Cappuccino Mix
Notes
Different flavors of powdered coffee creamer and instant pudding mix can be used to create different flavor combinations.
Ingredients
- 2 oz. Instant Espresso Powder
- 1 cup brown sugar, packed
- 1 box instant butterscotch pudding mix (4 serving size, regular or sugar-free)
- 1 (8 oz) bag crushed English toffee pieces (plain or with milk chocolate coating)
- 2 cups powdered milk
- 1/2 cup powdered French vanilla non-dairy coffee creamer
- 1/4 cup Dutch-processed cocoa powder
Instructions
- In the bowl of a large food processor, pulse the espresso powder, brown sugar, pudding mix, and toffee pieces until ground to a fine powder.
- Add the rest of the ingredients, pulsing and scraping down the sides of the bowl, as needed, until mixture is completely uniform.
- Add 2 Tablespoons of mix to a mug. Stir in 8 oz. of boiling water. (For each cup of water, use 2 T. mix)
