With fewer than 4 net carbs, you better believe this is my #1 indulgence! Not only is it creamy, but the dark chocolate flavor is totally intense. And it goes together so quickly, you can be enjoying this treat in less than three minutes flat! 🙂
Dark Chocolate Pudding Recipe…
Since this recipe only includes two ingredients, you’ll want to pick up those supplies immediately! Dark Chocolate Pudding is incredibly rich and satisfying. I love that I can make one serving, or four, depending on how many people want to enjoy a little decadence on our low carb diet. Dark Chocolate Pudding is very good on its own, but it becomes something truly special when a few red raspberries and REAL whipped cream are added.
I enjoy creating no-sugar-added treats to add to our Keto diets. By using full-fat ricotta, Dark Chocolate Pudding also adds a good amount of calcium to our diet…an important mineral, ladies! 🙂 I think this recipe might be my favorite way to get more calcium, if I’m going to be totally honest…
Truly, the longer I go without eating added sugar, the more I don’t miss it. Recipes like Dark Chocolate Pudding make me incredibly happy because it includes REAL ingredients…not even any sugar substitutes! I LOVE IT! For the extra richness, I use Hershey’s Dark Chocolate cocoa powder. Honestly, it’s the only cocoa powder I buy and use it in everything from brownies, cakes, and muffins, to hot chocolate and Dark Chocolate Pudding. I purchase it in a six-pack because I use it so often!
Dark Chocolate Pudding: Low Carb & Keto Friendly
Notes
If watching carbs, be sure to use the full-fat ricotta instead of part-skim.
Ingredients
For one serving:
- 1/4 c. full-fat ricotta cheese
- 1 1/2 t. cocoa powder (I recommend Hershey's Dark)
For four servings:
- 1 c. full-fat ricotta cheese
- 2 T. cocoa powder
- Optional toppings for a few more carbohydrates:
- red raspberries, real whipped cream (not Cool Whip), dusting of cocoa powder
Instructions
- In a small bowl, combine the ricotta and cocoa powder.
- Stir very well until completely combined.
- Add to serving bowls.
- Top with raspberries, whipped cream, or dusting of cocoa powder, if desired.
