Looking for a main dish recipe that leaves you sighing after the meal? This is usually the response I get from my husband with Cheesy Potatoes and Kielbasa Bake. WARNING: This is not a meal for anyone watching calories or fat! However, this was the recipe my husband requested for his birthday. So who am I to deprive him of creamy, cheesy potatoes baked on smoky, garlicky, kielbasa? 🙂 Though the ingredients are simple, Cheesy Potatoes and Kielbasa Bake is anything but boring!
Cheesy Potatoes and Kielbasa Bake Recipe…
Few foods make me quite as happy as cheese, potatoes, and meat. I mean, there is CHOCOLATE, but one can’t eat that all the time. 🙂 Cheesy Potatoes and Kielbasa Bake is a modification of a recipe I found decades ago in a Taste of Home magazine. I made the potatoes more flavorful and creamy than the original recipe, but the process is the same. In my opinion, these cheesy potato-loaded kielbasas are AMAZING! Even my pickiest eater proclaimed that he “loves” when I make these. For this week, I consider that a victory!
Another plus to Cheesy Potatoes and Kielbasa Bake is that I can have this meal ready in 45 minutes. From the time I peel the potatoes to dishing up each serving, I literally am in the kitchen 45 minutes. For a from-scratch meal, I think that’s pretty good. The recipe is easy, hearty, and *sigh* totally filling. Saving room for the piece of coconut cream pie my husband had requested for dessert was really hard!
The first step is peeling and cutting up the potatoes into even pieces. Cover with water and boil for 15 minutes, or until potatoes test done. Be sure to drain the water prior to making the cheesy mashed potato topping. 🙂
While the potatoes are cooking, split the kielbasa as shown above. This creates smoky little “boats” to hold the yummy cheesy potatoes! It is sooooo good!
After the cheesy mashed potatoes are mixed, mound a good amount on top of each piece of kielbasa. The only thing left to do is bake at 350° F for 20-25 minutes. The waiting is the hardest part!

Cheesy Potatoes and Kielbasa Bake
Notes
Different types of smoked sausage could be substituted for the kielbasa, though the seasonings will be different. Yukon gold potatoes could be substituted for the russets, though red potatoes are not recommended due to their lower starch content.
Ingredients
- 2 lbs. russet potatoes
- 12 oz. beef kielbasa sausage
- 1/2 c. milk
- 2 c. shredded cheddar cheese
- 2 t. prepared yellow mustard
- 1/2 t. salt
- 1/4 t. black pepper
- 2 T. unsalted butter
Instructions
- Preheat oven to 350° F.
- Grease a 7x11 baking dish. Slice kielbasa into four even pieces. Slice down the middle of each piece so that the kielbasa will lay open flat. Place in baking dish and set aside.
- Peel and cut potatoes into even pieces. Place in a large pot, cover with water, and cook for 15 minutes, or until potatoes test done with a fork. Drain.
- Using a hand mixer, beat the drained potatoes until smooth. Add milk, beating again until smooth.
- Add the cheese, mustard, salt, pepper, and butter to the potatoes, again beating until smooth.
- Divide potatoes and place a mound on each of the four pieces of kielbasa. (Any extra potatoes can be baked in a small greased casserole or custard cup.)
- Bake for 20-25 minutes, or until kielbasa is hot and potatoes have lightly browned edges.
- Serve immediately.
