It was a long day…so long that cooking a big meal for supper didn’t sound appealing. Instead, I decided to use one of my favorite suppers for lazy nights…scrambled eggs! However, I needed to kick things up a bit and make the meal more exciting than I felt. It was time to go recipe diving!!! đŸ™‚ From that search, Banana Toffee Muffins were born.
My cookbook collection is the size of the great library at Alexandria. Truly, it needs to be cleaned out, but there are too many memories in those books! I found this recipe in an old church cookbook, and instead of using chocolate chips, I added toffee chips. My husband doesn’t like chocolate and banana together, so he really liked these. These little lovelies are full of banana flavor, but had a nice caramel hit from the toffee chips. These will be great for breakfast tomorrow!

Notes
Feel free to substitute nuts, raisins, or chocolate chips for the toffee chips. Store in a tightly covered container.
Ingredients
- 3 large bananas
- 3/4 c. sugar
- 1 egg
- 5 T. melted butter
- 1 t. baking powder
- 1 t. baking soda
- 1/2 t. salt
- 1 1/2 c. flour
- 1/2 c. toffee chips (I used Bits 'O Brickle)
Instructions
- Preheat the oven to 375 degrees.
- In a medium bowl and using a hand mixer, mix the bananas until mashed.
- Add the sugar and egg to the bananas.
- Mix in the melted butter.
- Add in the dry ingredients and mix until just moist.
- Stir in toffee chips.
- Spoon into paper lined muffin cups.
- Bake for 18-20 minutes
